Bon Appetit magazine’s February 2012 The New South issue is creating quite the dust up on its cover. And it’s not just from the all-purpose flour and corn starch recommended to prepare the edition’s “Best Fried Chicken Ever!” recipe. In support of its issue dedicated to all things Dixie, the magazine’s cover line reads: “Savor The South: 41 Soulful Recipes From America’s New Food Capital.” Take that, Tom Colicchio.

Inside, Bon Appetit backs up the heady headline by whisking multiple well-known Atlantans and former Atlantans into the issue’s editorial mix. Former Watershed chef Scott Peacock, for example, lends his expertise to the BA Fried Chicken Primer, stating the obvious (“It’s all about the skin”), the sublime (“[Peanut oil] is the lard of oils”) and the downright lyrical (describing his dredging process, he advises the home cook, “You want a rumor of flour”).
 
Restaurant Eugene chef Linton Hopkins contributes his redeye glazed pork tenderloin with black-eyed peas recipe for the issue’s Southern Recipe Revival section while Foodist columnist Andrew Knowlton praises the chicken and shredded pork dotted Brunswick Stew at Harold’s Barbecue here. Atlanta native and current head honcho on NBC’s “The Office” Ed Helms tells the mag he takes his Southern iced tea sans sugar and with a lemon wedge, his Waffle House hash browns scattered, smothered and covered and brags on Restaurant Eugene and Miller Union as his two local fave eateries.
 
Outkast member Andre 3000, meanwhile, stars on the final page of the Southern accented issue by filling out the Back of the Napkin feature at R. Thomas Deluxe Grill on Peachtree Street. The pescetarian pop star advocates the use of kale over collards as his go-to greens variety and even supplies his own flash-steamed kale recipe. His secret ingredient? Two teaspoons of coconut oil.
