Fans of Australian Shiraz2, South African Pinotage, or Argentinian Malbec will note their absence on Miller Union’s beverage roster: Co-owner Neal McCarthy, who compiles the restaurant’s list, avoids the Southern Hemisphere. “No offense to those countries’ wine-making skills, but that’s a long way for a bottle to travel,” he says. You will, however, find a meticulously honed selection of European and U.S. exemplars, many from small, family-run vineyards that practice environmentally friendly growing methods, an echo of chef Steven Satterfield’s culinary philosophy.

Drink This: 2006 Las Flors de la Peira, an inky wine full of black fruit flavors (a blend of Syrah, Grenache, and Mourvedre) from France’s Languedoc region, and a gutsy partner to an entree like housemade lamb sausages: $75.
