Bombay Brasserie will open in Roswell on May 18th

Owner Ricky Walia hopes to blend traditional Indian dishes with global influences

Ricky Walia, of Cafe Bombay and Masti, is partnering with Sunny Minhas to bring Bombay Brasserie to Roswell. The restaurant, located at 900 Mansell Road, plans to serve traditional Indian dishes with European, Chinese, and American influences. The menu will feature dishes such as chicken tikka masala, mustard greens with spinach, Indian butter and cornbread, and tandoori salmon.

Walia also plans to showcase two custom-ordered copper encased clay tandoori ovens imported from India. “It took two and a half months to get them, but it was worth the wait,” Walia says. He put them in view of the dining room so guests can watch the chefs in action. The bar will serve local craft beers and wine, as well as a selection of cocktails flavored with spices such as cumin, turmeric, and coriander.

The dining room features a modern decor and neutral colors with art accents and designs inspired by “India’s bright color palette.” The restaurant will have live performances from belly dancers on Friday and Saturday nights, as well as a 40-seat patio where Walia plans to serve hookah. The restaurant will open seven days a week for lunch and dinner.
