Buckhead Pizza Co. owner and Ray’s New York Pizza founder Sam Abdullah is opening a design-your-own pizza spot in Sandy Springs later this month. Located in the former home of Evos at 5590 Roswell Road, Pizza Crosta (Italian for pizza crust) will serve individual, 10-inch, thin-crust pizzas that cost about $10 each.

The dough will be made in-house daily in three varieties: whole wheat, white, and gluten-free. The mozzarella cheese and the tomatoes will be imported from Italy, and two varieties of marinara sauce will be available—one with basil, oregano, garlic, and olive oil, and the other with pepper flakes for an extra kick. There will even be a dessert pizza that changes monthly (think chocolate or strawberry). Diners can also design their own salads with a variety of toppings and proteins, including cold cuts, pepperoni, and buffalo chicken. But what makes Pizza Crosta most unique, Abdullah says, is the complimentary Dipping Bar, where diners can choose from six sauces for their crust.

“From my experience, a lot of guests consume the center of their pizza but they feel the crust is boring. I want to give them a reason to eat their crust,” he says. “I think it’s the best part of the pizza.”

Dipping Bar offerings may include garlic sauce made with extra virgin olive oil and fresh oregano; chipotle with balsamic; marinara; spicy ranch; and balsamic vinegar. Other sauces like Asian and Moroccan may be available from time to time.

Although there’s no official bar, Pizza Crosta will offer six beers on tap, plus four wines “that pair well with pizza,” Abdullah says.

Pizza Crosta will have about seventy seats and offer counter service only. It will have hardwood floors, a black and white ceiling, and stainless steel and cream accents. Abdullah describes it as “very cozy.”
