Matt Bradford, one of a handful of local wine directors who have passed the strenuous advanced certification exam with the Court of Master Sommeliers, manages a list of more than 500 wines that covers every major grape-growing region in the world with skillful proportion. Canoe’s affluent regulars have seasoned, adventurous palates and drink plenty of expensive French and Italian stunners alongside cornmeal-crusted trout or grilled duck breast, but Bradford also includes a list of ten or so personal favorites that cost $30 to $35.

Drink This: Impress a client with a 2005 Château Saint-Pierre, $160, a brooding Bordeaux; call ahead to have Bradford decant it before dinner.
