The Swallow at the Hollow

Swallow serves beloved foods uplifted by attention to detail. Baby back ribs, painted with sauce, leave happy smears across busy mouths. Be sure to try the sweet South Carolina–style mustard sauce on a chopped pork sandwich, made with bread baked on the premises.

Chef-owner Bill Greenwood is always tinkering with his smoking process and serves up some unique twists: a twang of tamarind in the tomato-based sauce, a pit-smoked Portobello mushroom sandwich piled with green tomatoes and smoked Gouda. Save room for his famous, lofty pies for dessert.
