After launching a burrito home delivery service, followed by a small counter in the Sweet Auburn Curb Market, Matt Hinton is finally hitting the mainstream in a tiny bungalow decorated with architectural antiques and old photographs. Hinton, a theologian who sought to re-create the style of long-defunct Tortillas, makes a Mission-style beauty crammed with tender and well-seasoned beans, rice, melted cheese, salsa fresco, and optional ingredients that include green chiles, Berkshire pork, and tofu. It is one of the best burritos east of San Francisco. The grilled burrito, a recent innovation, is best enjoyed on the premises without dallying. Given a choice between his huge tacos or his lavishly filled quesadillas, go for the latter, built on the same thick flour tortillas as the burritos.
