Buttermilk Biscuits
Serves 8–10
4 cups flour, plus more for surface
4 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons salt
4 ounces unsalted butter, lard, or shortening
2 1/4 cups buttermilk

Preheat oven to 400°F.

Sift flour, baking powder, baking soda, and salt into a large mixing bowl. Using your fingertips, break up fat, and rub it into dry ingredients until it is the size of peas. Make well in center, and add buttermilk. Mix by hand until just combined; do not over-mix.

Turn dough out onto a well-floured surface, and cut into pieces with floured knife or bench scraper. Place on parchment-lined sheet pan, and bake for 7–10 minutes or until golden.
