Mushroom Sauce

Make this simple sauce when you want to dress up crepes, potatoes, rice, or our Herbed Grits Cakes With Garlicky Greens. You can also use it as a sauce for pasta.
 
Makes 3/4 cup
Preparation time: 5 minutes
Total time: 25 minutes

Ingredients
1 tablespoon olive oil
1 8-ounce package mushrooms, sliced
Salt and pepper
1 clove garlic, chopped
1/4 cup dry white wine
1 cup whipping cream

Instructions
Heat the oil in a skillet over medium-high heat. Add the mushrooms, sprinkle with salt and pepper and cook without stirring until seared (golden brown on the bottom side), 6-8 minutes. Turn the mushrooms and cook on the other side 3 to 4 more minutes. Add the garlic, and cook, stirring, 1 minute. Add the wine, and cook, stirring once or twice, until liquid is nearly gone. Add the cream and cook until the liquid is reduced by about half, forming a thick sauce, 3 to 4 minutes.
