Roasted Curried Okra

Inspired by Indian cuisine, this simple recipe offers a low-fat, spicy alternative to deep-fried okra.

Cooking time: 15 minutes

Ingredients
1 pound fresh okra
1 teaspoon canola oil
1 teaspoon coarse salt
1 teaspoon curry powder
1 teaspoon mild chile powder
1/2 teaspoon ground cumin

Instructions
Preheat the oven to 450 degrees. Rinse and thoroughly dry the okra. Slice lengthwise in half. Place okra in a bowl and drizzle with oil. Toss to coat. Sprinkle the okra with salt, curry powder, chile powder and cumin; toss to evenly coat the okra with the seasonings.

Spread in a single layer on a cookie sheet. Lightly spray the okra with cooking spray (or spritz with vegetable oil in a pump bottle). Place in the oven and cook until slightly crispy and golden, about 15 minutes. Serve warm.
