I made this for a guest who frequently came in with a good knowledge of cocktails and a palate for herbal, spirit-forward drinks. I usually make her drinks with whiskey, but she requested something with genever, a Dutch-style gin that is distilled from malt wine. When aged, it can sort of have a flavor profile like a gin/whiskey hybrid. She was a bit dressy this evening, and was wearing an interesting head piece, hence the name: Holland Headdress.
1 1/2 oz aged Dutch-style gin (I used Boomsma oud Genever, but Bols Genever would also work, as well as Anchor Genevieve gin.)
3/4 oz Cocchi Americano
1/2 oz cynar
1/4 oz green chartreuse
2 dashes orange bitters
10 drops salt tincture (or a small pinch of salt)
1. Stir/strain into a chilled cocktail glass.
2. Garnish with a lemon peel (make sure to express the oil of the peel over the surface of the drink).
