Kale and Orzo

Buttery and tender, it’s hard to believe this satisfying combination is actually good for you.

Ingredients
2 teaspoons olive oil
1 large clove garlic, chopped
1 large bunch kale, rough-chopped, rinsed and dried
Salt
1/4 cup apple cider
1 cup orzo, cooked according to package directions and drained
2 teaspoons butter
2 tablespoons grated Parmesan cheese
Freshly ground pepper

Instructions
1. Heat oil over medium-high heat in a large skillet. Add the garlic, then the kale. Sprinkle with salt; cover. Cook, turning occasionally, for 5 minutes. Add cider, cover. Cook until kale is tender, about 5 minutes. Stir in the orzo, butter and Parmesan. Season with salt and freshly ground pepper to taste.

Makes 4 servings.
