Spiced Roasted Potatoes With Cilantro-Mint Dressing

These potatoes get a little kick from a blend of Indian spices. Garam masala—a spice mix including coriander (cilantro), cumin, ginger and cloves, among others—is available in many mainstream grocery stores.

Cilantro-Mint Dressing

Serve this sauce over roasted lamb, as a dressing for a salad of spring greens, radishes and red torpedo onions (a springtime farmers market staple), over roasted cauliflower, or with Spiced Roasted Potatoes.

Late summer is the perfect time to make this Northern Indian stew, when eggplants and peppers are plentiful and tomatoes are still available, if not slicer-perfect. You can use any kind of eggplant. The key is to roast it first to bring out a smoky flavor. Serve with basmati rice.

I associate cilantro, that refreshingly pungent herb, as a summer ingredient because it pairs well with citrus and because it’s essential in so many tangy dishes: salsas, chutneys, Thai salads. But to be honest, that’s kind of crazy.
