Longtime dance instructor Carrie Thomas says she never would have guessed that she would be teaching salsa outside of the city limits. Hector Santiago fell in love with Spain the first time he visited about 15 years ago. Since then, he’s been trying to recreate the energy of the buzzing city centers he encountered there. He craves the feel of the packed restaurants and bars with patrons standing around high-top tables, sharing pintxos and tapas. That’s what he hopes to bring to Ponce City Market with the opening of a tapas bar called La Metro, slated to take over the former Biltong Bar space in May or June.
