Thanks be to new Watershed chef Zeb Stevenson, who has kept one of his predecessor’s greatest triumphs on the menu. The cheesy, eggy wonder—created by Scott Peacock and Edna Lewis, both venerable Southern cooks—is a nuanced combo of cream, cheddar, and grated onions, and so light it could almost moonlight as a soufflé.
