Q&A with Katie Birmingham of Noon Midtown

After the meal, I had the opportunity to chat with Noon’s multi-talented chef/owner, Katie Birmingham, about her brainchild. A former attorney who has worked for some of the top toques in town, Birmingham shared her plans to evolve the concept that she and her architect husband created after visiting several hole-in-the-wall sandwich places while honeymooning in Italy:

What are your favorite sandwich spots?

I’m on the hunt for outstanding sandwich spots of all types around the metro area—any favorites worth shouting out? I make frequent treks to Muss & Turner’s in Smyrna, and I’ve been enjoying Noon Midtown (which I saw on Twitter is opening for dinner service soon, good news for local residents), but I’d love more suggestions.
