Before she’s even set down her Louis Vuitton daybook, a well-heeled regular calls out her steak order to a bartender. It’s a given her usual Negroni is on the way.

And so it goes at Kaiser’s Chophouse, a comfortable hangout for a boisterous, upscale crowd in the Hammond Springs shopping center on Roswell Road.

A roomy cocktail lounge awaits with a dramatic granite bar top, potted white orchids, and tall wooden shelves lined with sculptures, quirky mementos, and cookbooks. The main dining room is a circular swirl of tables draped in white cloths and warmed with moody amber lighting. In the back, an open kitchen offers a glimpse of chef Peter Kaiser in action. 

Before opening his own place, Kaiser was best known for his 30-year tenure with Buckhead Life Restaurant Group, including an 11-year run at Pano’s & Paul’s and another three years at Buckhead Diner. In 2017, he opened Kaiser’s Chophouse in collaboration with steakhouse impresario (and fellow Buckhead Life veteran) Kevin Rathbun.

Kaiser’s European flair, affable manner, and culinary chops are a winning combination. His signature spaetzle is inspired by his mother’s recipe, he’ll tell you, noting she would cook it on “no-meat Fridays” in their Catholic household in Liechtenstein. The dish is rich and comforting with chewy noodles, creamy Gruyère, soft onion slivers, and a sprinkling of herbs. Like the must-try pappardelle Bolognese, it is available as a half order. The smoked-salmon potato skins and the wagyu short-rib soup dumplings in a soy-sherry broth are both superb starters. The steaks, from master butchers Allen Brothers in Chicago, include a half-dozen prime cuts such as barrel-cut filets, New York strips, and dry-aged rib eyes. Finish with the warm skillet cookie, topped with vanilla ice cream and oozing gooey chocolate decadence.
