King of Pops will open a kiosk in Ponce City Market’s Central Food Hall next month—and patrons should expect a lot more than just popsicles. Inspired by their Queso Kings pop ups, they’ll serve three to four grilled cheese sandwiches, including one option called the Letter P (mozzarella and prosciutto with pesto and plum). Salads made with produce from their King of Crops farm, and popsicle-themed cocktails will also be available.

Neil Ringer, who’s been with the company since the beginning and previously worked at Holeman & Finch and Restaurant Eugene, will manage both the bar and food programs. “The strategy will be to have approachable cocktails—not too many ingredients you’re not familiar with,” he says.

Many of the drinks will include a popsicle instead of ice. Flavors include blackberry ginger lemonade with a dark and stormy; raspberry lime with classic margarita; and grapefruit orange blossom paloma. There will also be a build-your-own option so patrons can select a fruit, a spirit, and an herb. Beer and wine? They’ll serve that, too, along with regular pops and a few dipping options (chocolate!).
