Since opening in Atlanta last year, Westside fast-casual spot Holler & Dash has become best known for its biscuit sandwiches, usually topped with Southern comforts like fried chicken, pimento cheese, fried green tomatoes, and sweet pepper jelly. Now, the Cracker Barrel-backed chain is expanding its offerings to provide a more well-rounded experience with a focus on lunch and lighter entrees.
“We wanted to keep things fresh and relevant. Guests were saying they love our biscuits for brunch and breakfast, but wanted healthier items with some more variety for lunch,” says culinary director Brandon Frohne.
He was inspired by the melting pot of flavors that comprise modern Southern cuisine. “We take heirloom recipes and give them a modern Southern approach,” Frohne says. “Everything is fresh, scratch-made, with bold, vibrant flavors.”
An example is the new honey crunch chicken salad sandwich with lime, cranberry, and carrot-scallion slaw. The slaw features rice vinegar for an Asian feel. Likewise, the new charred corn salad side is a take on Central American street corn—a way of offering a lighter version of Southern corn pudding or corn on the cobb, made with Greek yogurt.
