Madeira Park to soft open in historic Poncey-Highland space February 15
Tonight, the 2,000 square feet once home to Carpe Diem (the predecessor of Apres Diem) will welcome a wine bar called Madeira Park. It’s a project that Miller Union co-owners chef Steven Satterfield and general manager Neal McCarthy have been working on since 2018. Post-pandemic, they teamed up with Dive Wine pop-up founder Tim Willard to bring the bar to life. Madeira Park will soft open to the public Saturday with limited hours (opening at 5 p.m.), expanding to regular hours on Tuesday.

Oyster shells from Atlanta restaurants are helping save the Georgia coast
Hunt Revell realized that oysters are more than just slurpable happy hour treats when he taught high school in New York City. A Georgia boy, he remarked to his coworkers that he grew up eating oysters all the time, to which they replied, “‘Yeah, but we like them because they filter 50 gallons of water a day, and they’re good for the marine habitat, and oyster reefs can help with storm surge, flooding, and erosion, and we think they’re a great sustainable food source,’” recalls Revell. “I was like, Whoa, okay, that’s a whole ’nother level of love for oysters.” This stuck with him when he moved back home, and in 2021 he cofounded Shell to Shore, an oyster shell recycling nonprofit, in hopes of restoring Georgia’s shorelines.

Miller Union’s Steven Satterfield on writing a cookbook in a pandemic and what inspired Vegetable Revelations
Miller Union owner and executive chef Steven Satterfield is renowned for his vegetable-forward dishes. He released his first cookbook, entitled Root to Leaf in 2015 and was named the James Beard Foundation’s Best Chef: Southeast two years later. In the last few years, he’s been exploring putting a multicultural spin on vegetables, while evolving his cooking style to include different textures and flavors.
